Step 1
1. Place a 10 inch nonstick skillet over medium-high heat. Once warm add oil and swirl pan.

2. Pour shredded potato into pan and evenly distribute, pressing down to create a flat layer. Cook for 5 minutes. Flip and continue to cook for 2 minutes. Season with salt and pepper.

3. In a mixing bowl whisk together eggs and chives.

4. Pour mixture over potatoes, cover and cook until eggs have just started to set, 2 to 3 minutes.
Step 5
5. Sprinkle cheese and fold omelet in half.
Step 6
6. Season exterior with salt and pepper and continue to cook until browned and crisp on the bottom, an additional 2 to 3 minutes.
Step 7
7. Remove from heat, sprinkle with more chives, cut into wedges and serve.
