Instructions
Step 1
1. Weigh the tofu. Squeeze out any excess water. Dry with a paper towel and then wrap it with more paper towels and set aside in a colander in a bowl so it can drain in a bowl.
Step 2
2. Finely dice the celery, parsley, and green onion and add to a large metal bowl.
Step 3
Squeeze the tofu out to remove any excess water possible.
Step 4
Add remaining ingredients to the bowl and mix together well with spatula.
Step 5
Crumble tofu into the bowl with the veggies. Drain any excess liquid.
