Step 1
Sauté 1 onion, 1 shallot, and around 2 cups of shredded carrots with butter and seasoning. Cook until tender. Add mushrooms (almost fill your Dutch oven or pot. Sauté these until cooked down and all liquid is absorbed back into the mushrooms. Deglaze the pot with sherry wine. Cook down a little then add veggie broth to desired amount. Let simmer for 10 minutes. Added cream and bok choy or spinach and simmer for 5 more minutes. Serve with your favorite bread.
