Instructions

Step 1
Drain the tofu and cut into cubes.
Step 2
Slice the onion into half-moons, finely chop the garlic and cut the pepper into big chunks.
Step 3
In a large sauce pan, heat one tablespoon of oil and fry the tofu until browned and crispy. Remove from pan and set aside. Heat up another tablespoon of oil and fry onions until soft for about 5-7 minutes. Add the garlic and chilli and fry for a further minute. Add in the pepper and cook for 4-5 minutes and then add the curry paste. Cook all together for 1-2 minutes and then pour in the stock. Add in 1/2 the can of coconut milk. Bring to a boil and then reduce and simmer for 15 minutes. Add in the sugar snap peas and the noodles to cook in the last 5 mins and then add in the tofu to reheat in the soup.
Step 4
Serve with lots of fresh coriander and a squeeze of lime!
