Instructions
Step 1
Start by peeling your carrots and then slicing into quarters lengthwise
Step 2
Place into a large mixing bowl and add the olive oil, salt, pepper and oregano
Step 3
Mix to coat and then place on a baking sheet line tray individually so they aren’t overcrowded in the pan
Step 4
Place into the oven at fan 200° for 35 mins, flipping the carrots over half way through the cooking time. You could also use an air fryer but the cooking time will be reduced to approx 20 mins
Step 5
Before they are finished, dice the garlic and then in a medium hot saucepan add the light butter and garlic
Step 6
Fry for a minute or two until fragrant and then add the splash of water followed by the miso paste and honey
Step 7
Stir to combine in the pan and simmer for another minute until sticky
Step 8
Remove the carrots from the oven once the 35 mins is up and place them into the frying pan
Step 9
Completely coat the carrots in the miso honey glaze and then carefully place them all back in the baking tray
Step 10
Place under a hot grill for 5 mins to caramelise and then you’re done, enjoy
