Marinate Chicken
Step 1
Cut chicken into bit sized pieces

(Optional) If bone in, wash chicken in water a some salt. Dry chicken

Marinate chicken with salt, white pepper, mix

Add sesame oil and mix. Set aside to marinate
Prep Veggies

Cut onion and peppers into bit sized pieces

Crush garlic
Step 7
Slice ginger into matchsticks
Sauce

Mix Soy Sauce and Xiaoxing wine
Cook
Step 9
Quick fry garlic in some oil, and remove from wok

Heat wok to high. Add sesame oil from sauce

Add chicken to wok, do not move and let set, set to low. Cook until golden.

Add sauce mixture, 1/2 cup of water. Bring to a boil on high

Season with white pepper and rock sugar

Add garlic and ginger, bring heat to medium low.

After sauce has thickened, bring heat to high, add onions and peppers
