Step 1
Wash and chop potatoes into bite size pieces then Cook for 15 minutes ( I prefer to steam so there is little moisture ) . Let air dry and cool down

Fry the cooled potatoes in some olive oil on medium high heat until they start to color and go crispy on the edges then remove the potatoes from the pan

Step 3
Fry mustard seeds and cumin seeds for two minutes in a little oil then add diced onion and fry two more minutes . Add garlic ginger and chopped green chili and fry another minute . Add cumin coriander chili powder and garam masala then Add tomatoes and salt and pepper then cook until the tomato softens

Step 4
Add the potatoes back into the pan and cook ten minutes so the flavors infuse . Season to taste then garnish with freshly chopped coriander
