Aloo Bengan / Potato and Aubergine curry

Instructions

Step 1
Fry sliced onions in some oil until it changes colour and then fry ginger and garlic pastes for a couple mins
Step 2
Add the tomatoes, green chillies and spices (salt, red chilli flakes and turmeric powder) and cook until the masala is ready and oil comes up
Step 3
Cut the potatoes, add to the masala and cook on high heat for a couple minutes
Step 4
Peel the aubergine and chop in small pieces, rinse with cold water and add to the pan
Step 5
Add cumin and coriander powder along with fenugreek leaves and mix for couple minutes
Step 6
Cover and cook on low heat for 20-25mins until potatoes and aubergine are cooked through. Once the aubergine cooks, it should form a gravy.
Step 7
If the curry is too watery, turn the heat high and dry it out a little
Step 8
Add coriander and garam masala, mix and cover and cook on low heat for 4-5 minutes
Step 9
Serve with roti or rice
