Instructions
Step 1
Fry onion in some oil with whole cumin
Step 2
Add tomatoes and green chillies along with salt, red chilli flakes and turmeric powder
Step 3
Cut the carrots in little circles and peel cut the potatoes in little pieces
Step 4
Once the masala leaves oil, add the carrots and fry on high heat for 5 mins
Step 5
Add potatoes and peas and mix with the masala.
Step 6
Add fenugreek leaves and about 0.5 cup water if needed. Mix, cover and cook on low heat for 25mins, mixing at 10, 10 and 5 min intervals to ensure everything cooks evenly
Step 7
Add cumin and coriander powder and mix and cook on low heat for about 5mins. You can also add about 2 tbsp butter at this point. (Adding these towards the end ensure the taste is fresh and the vegetables don’t lose their colour)
Step 8
Serve with roti or boiled rice with yoghurt and pickle
