Ingredients

1 lbchicken legs and thighs
2 Tbsoil
1 TbsKashmiri chili powder
1 tspred chili flakes
1 tspgaram masala
1 tspturmeric
1 Tbssalt
3 Tbsyogurt
1 Tbsgarlic ginger paste
1 Tbsghee
1 tspcumin seeds
1 tsppeppercorns
2 piecescinnamon stick

5whole cloves
ground nutmeg
5cardamom pods
1red onion
small, sliced
3 cupsbasmati
soaked 30 minutes
2 cupscoconut milk
cilantro
chopped
3 ½ cupswater
Instructions
Step 1
Prepare everything in advance to be ready to toss into pan.
Step 2
Fry chicken and chili powder, flakes, garam masala, turmeric, salt, yogurt and garlic ginger paste for about 5 minutes till chicken is just cooked through.
Step 3
Remove chicken to a plate and set aside.
Step 4
Add ghee and cumin, peppercorns, cloves, cinnamon, nutmeg, cardamom and sliced onion.
Step 5
Stir in rice after it has soaked for 30 minutes. Fry for 1 minute.
Step 6
Add coconut milk and water. Add salt to taste and cilantro.
Step 7
Bring to a boil and cook till water Leven is the same as rice level.
Step 8
Turn heat to very low, cover and simmer for 20 minutes.
