Instructions
Step 1
Slow cooker:
Sauté onion and garlic Add corn and beans, diced tomatoes, tomato sauce, broth, quinoa, and seasonings. Stir, cover and cook on low for 6-8 hours or high for 3-4 hours. Serve hot with garnish of choice. Stovetop:
Cook onion and garlic. Add all other ingredients stir and bring to a boil. Reduce heat and cover and cook for 35-40 min. Let sit for 5-10 min for flavors to marry.
