Ingredients

2 lbsmaple sausage
1 lbhot sausage
4 tspminced garlic
1bell pepper
chopped
2 TBSancho chili powder
1 TBSchipotle chili powder
1 Tbsground cumin
1 tspdried oregano
½ tspground coriander
1 tspsmoked paprika
¼ tspground cinnamon
3 cupswater
2.5 ribscelery
chopped
14 ozcan crushed tomatoes
6 ozcan tomato paste
1lime
squeezed
2cans red beans
3 tspbeef base
¾ tspbaking soda
1onion
large, chopped
Instructions
Step 1
Place sausage in crockpot and break up (You may pre cook and drain fat/rinse fat or place directly in crockpot). Add all ingredients except the onion if you like to keep the crunch, mix well. Then add all wet ingredients and mix well. Optional, you can ad 2 tsp blackstrap molasses. Set crock pot to keep warm for at least 7 hours (4.5 if using pre cooked sausage). Stir occasionally. At finish mix in the chopped onion if held back. Can serve with sour cream, cilantro, hot sauce, cheese, and or lime.
