Instructions
Step 1
Roast the vegetables on a pan with olive oil, salt and pepper at 400° for 25-30 min.
Step 2
In a blender, combine all sauce ingredients and blend until smooth, adding water to change consistency as desired, and salt if needed.
Step 3
Combine cooked noodles with sauce and roasted veggies, cook over low heat until sauce is warmed, then garnish with toppings as desired.
