150mlWhite cooking wine

150gButton mushrooms

200gtomatoes
Tinned, sieve off juice

1 bunchfresh parsley

2 Tbspdried tarragon

300mlchicken stock

50gflour

2 Tbspolive oil

2 Tbsptomato purée

110gbacon lardons

55gcaster sugar

salt

Instructions
Step 1
Brown the chicken until golden on all sides. Put aside


Step 2
Fry bacon and onion add sugar and caramelize. Put aside with chicken



Step 3
Fry the mushrooms for three minutes. Add the flour and cook for one minute. Put aside with chicken and bacon


Step 4
Stir in the white wine, stock and tomato paste. Add tarragon and seasoning, then bring to boil.





Step 5
Reduce to a simmer, add tomatoes, add chicken, bacon and mushroom back to the pan, let cook for 30 mins.
Step 6
While it cooks, cook your pasta, potatoes or rice to serve with

When serving sprinkle with parsley
