Ingredients

300gdry rice noodles

1red onion
sliced

1garlic clove

1 tspground ginger

Β½ cupsugar snaps
chopped

1green pepper
sliced

400gTinned Black Beans

1 Tbspolive oil
For the Peanut sauce

Instructions
For the Peanut Sauce
Step 1
Mix together the peanut butter, soy sauce, sriracha and lemon juice




Step 2
Prepare the rice noodles according the packet and drain them once theyre cooked.

Step 3
Add the olive oil to a pan over medium heat, once the pan is heated add the onions and garlic and cook until the onions are soft.



Step 4
Add the peppers, sugar snaps, and ginger. Cook until everything is fragrant and soft. Add the drained black beans last and cook for a further minute.




Step 5
Mix together the peanut sauce with the cooked and drained rice noodles. Finally mix together the stir-fried vegetables and black beans and serve with a wedge of lime and a sprinkle of spring onions.
