The French onion soup is simple, inexpensive, and offers a rustic and warming taste experience. The soup, which mainly consists of yellow onions in a tasty broth with wine, thyme, and garlic, is topped with a lovely bread and cheese cover and gratin in the oven.

Ingredients

1kgyellow onion

3 tablespoonsoil

2garlic cloves
chopped

1 tablespoonfresh thyme
chopped, or dried, 1 tablespoon fresh equals 1 teaspoon dried

1 tsppowdered sugar

3 tablespoonsbutter

200 MlWhite wine

1200mlwater

2chicken stock cubes
vegetable

2bay leaf

salt

black pepper

0.5baguette

200mlcheese
grated, preferably gruyere, or other aged cheese
Instructions
Step 1
Peel and thinly slice the onion. Sauté the onion in a pan in the oil over medium heat, covered, until soft, about 30 minutes. Lift the lid and turn up the heat. Add garlic, thyme, sugar and butter and fry the onion until it has a nice colour.
Step 2
Pour in the wine and let it boil for a minute. Add water, stock cubes and bay leaves. Let simmer for about 10 minutes and season with vinegar, salt and pepper. Lift up the bay leaves.
Step 3
Set the oven to 250°C(480 F) top heat/grill.
Step 4
Slice the baguette thinly.
Step 5
Pour the soup into ovenproof serving bowls, put on the bread and sprinkle with the cheese. Gratinate for a few minutes in the upper part of the oven. Feel free to top with pepper.
