Instructions
Step 1
Roughly chop all vegetables.
Step 2
Fry onions and celery on a few sprays of olive oil.
Step 3
Put all the other vegetables, stock cubes and tin of chopped tomatoes.
Step 4
Pour boiling water so it just covers the vegetables.
Step 5
Boil for about 30 mins and use stick blender to blend the soup.
Step 6
Serve by itself or with some bread or grated cheese.
