Instructions
Step 1
In a large roasting pan add carrots, shallots, whole garlic bulb, thyme, cumin, chilli flakes. Season with salt & pepper and drizzle with olive oil. Roast at 190C for 45-50 mins until carrots are soft.
Step 2
Add baguette croutons to an oven tray lined with parchment, add grated parmesan, pumpkin seeds and drizzle with olive oil. Roast for 7-10mins @ 190C.
Step 3
Remove roasted carrots from oven when done, squeeze out roasted garlic, remove thyme sprigs & place everything in a blender, add hot stock and blend.
Step 4
Serve with croutons & pumpkin seeds, cream & a drizzle of chilli oil.
