FIESTA SALAD πππ
This is one of the first recipes I ever put on my blog and it is perfect to bring to summer bbqβs. I love putting this on tacos, burrito bowls or just eating it by itself or with baked tortilla chips π
Ingredients
15 oz can black beans, rinsed and drained
15 oz can kidney beans, rinsed and drained
15 oz can cannellini beans, rinsed and drained
1 yellow bell pepper, chopped
1 red bell pepper, chopped
10 oz package frozen corn kernels
1 red onion, chopped
1/4 cup fresh cilantro, chopped
Dressing Ingredients
1/2 cup red wine vinegar
juice of 1 lime
2 tbsp maple syrup
1 tsp salt
1 clove garlic, minced
1 tbsp ground cumin
1/2 tbsp crushed red pepper
1 tsp chili powder
Take the salad ingredients and combine in a large bowl. Mix the dressing ingredients in a separate small bowl until well combined. Pour dressing over salad and let sit and marinate for at least 1 hour before serving.
