Instructions
Step 1
1. Heat coconut oil in a large non-stick frying pan.
Step 2
2. Add shaved Brussels sprouts to pan and sauté for 3-5 minutes, until they're golden and cooked through.

3. Add the lentils, curry powder and cumin to the pan and continue to sauté for a further 2-3 minutes, until lentils are warmed through and spices have mixed. Season with salt and pepper.

4. Meanwhile, make cumin-tahini dressing by adding all of the ingredients in a small bowl and whisking until smooth.
Step 5
5. Plate up and sprinkle with pumpkin seeds. Drizzle over the dressing, to serve.
