Beet poriyal with goat cheese!
I had a bunch of ready to cook beets from Costco and wanted to make beet poriyal the usual way (roast and add coconut). But while I was roasting the beets, I got reminded of the beet arugula goat cheese salad I ate in a restaurant.
So I changed the recipe a little to include those and the end result was a hit.

Instructions
Step 1
Heat ghee and add urad dal
Step 2
Once urad dal is roasted, add mustard and cumin and roast for a couple more minutes
Step 3
Chop steamed beets and add them
Step 4
Roast them for 5-7 min
Step 5
Add arugula and let it cook till wilted, about 3-5 min
Step 6
Add salt and give it a good stir
Step 7
Crumble goat cheese and add it
Step 8
Cook for a couple min more and serve.
