Instructions
Step 1
Preheat oven to 200°C (fan).
Step 2
2. Cut pastry into 4 pieces.
Step 3
3. Mix ricotta with lemon zest and thyme.
Step 4
4. Spread half of the ricotta mixture on one piece of pastry. Cover with another pastry layer and add 2 tsp of cranberry sauce. Repeat with another pastry layer and the remaining ricotta mixture. Finally, cover with the last piece of puff pastry.

5. Divide into 2 cm strips.

6. Twist each strip 3 times, place on a parchment-covered sheet.
Step 7
7. Brush with egg yolk and bake at 200°C (fan) for 15 mins or until golden.
