Protein Gingerbread Men

A simple gingerbread biscuit with a good snap and texture from the ground almonds.
I personally like a strong gingerbread so I doubled the amount of ginger I put in!

Instructions
Step 1
Preheat an oven to 180c fan and line a tray.
Step 2
Mix together all the ingredients until a dough ball forms and reserve 1 TBSP plain flour for later.
Step 3
Flatten the dough ball into a disc and sprinkle flour over a surface before placing the gingerbread dough back on top. Sprinkle flour on top too.
Step 4
Roll into a sheet that is 0.5 cm thick and cut the gingerbread men out (or whatever cutter you decide to use)
Step 5
Bake for 10 minutes until golden brown and cool on a wire rack before optionally decorating.
