Beans with spinach and lemon juice
Welcome back to another episode of my series, what I like to cook for myself as a personal chef who’s had a long day and just can’t be bothered. Its been a while, thanks for your patience! This is so simple and so delicious, very lemony cannellini beans with lots of garlic, chilli and spinach. Heaven!
Ingredients:
1 700g jar of cannellini beans
6 cloves of garlic (or to taste lol)
1/2 a white onion
1 red chilli
200ml stock
2 handfuls of spinach
1 lemon
Salt and pepper
Method:
Slice the onion and sauté in oil until just browning, then add minced garlic and diced chilli. Cook down for another minute and then add in the beans and their brine. Top up with veg stock and bring to a boil and then let simmer until thick, about 5-10 minutes. Finish by stirring through lots of spinach, lemon juice and pepper!
