Ingredients

800 gramsblack beans
cooked
65 gramsmushrooms
chopped
80 gramsonion
chopped
10 gramsgarlic
chopped
80 gramskale
chopped, stems removed
2 tablespoonsnutritional yeast
½ tspcumin
½ tspblack cumin
1 tsporegano
1 tspfennel seeds
¼ tsppepper
1 tsppaprika
roasted
1 teaspooncoriander
1 tspgarlic power
2 teaspoonstaco spice mix
more to taste
Instructions
Step 1
soak a little more than 2 cups of dried black beans 12 - 24 hours (change water after 12 hours)
Step 2
cook the black beans in a pressure cooker on high for 30 min. slow release. Brain the liquid out of the beans when they are finished cooking
Step 3
chop all the veggies very small or dice, except kale in a food processer (or by hand)
Step 4
put the veggies from the food processor and all the spices in a large pan and cook on med hogh in veggie broth or water for 3-5 min.
Step 5
put the kale in the food processer and chop till very fine, little pieces
Step 6
after the veggies in the pan have cooked, add the kale and cook for 1-2 more min. Adding just enough water so the veggies do not burn. they to get almost all the water to evaporate and lower heat if needed.
Step 7
after kale is cooked add the beans to the pan and mash with a potato masher and mix everything really well
Step 8
put inside burritos, tacos, lettuce, on a salad or just eat plain
