Step 1
Toast pecan nuts on pan for 3-4 mins
Step 2
Place the 2 eggs, 2 bananas, vanilla and cinnamon in a blender and whizz until smooth and thick
Step 3
Gently press the bread into the liquid
Step 4
Heat the oil in a frying pan over medium high heat and cook bread 2-3 mins each side
Step 5
Serve immediatkt with a sprinkle of cinnamon and pecan nuts and sliced bananas on top
