Crockpot White Chicken Chili — West Coast Capri
I don’t know about the rest of you, but this time of year I always want to just make every meal in the crockpot - especially if it’s a delicious soup or chili. I have shared our very favorite chili on here that we keep making year after year, but I have been wanting to find a white chicken chili

Ingredients

1 lbboneless skinless chicken breasts
0.33yellow onion
diced
2cloves garlic
minced
1can chicken broth
12 ozcan cream of chicken
1cans great northern beans
drained and rinsed
1cans diced green chiles
1can whole kernel corn
drained
1 tspsalt
½ tspblack pepper
1 tspcumin
¾ tsporegano
½ tspchili powder
¼ tspcayenne pepper
fresh cilantro
chopped
4 ozreduced fat cream cheese
softened
¼ cuphalf and half
sour cream
fresh cilantro
minced
green onions
chopped
tortilla strips
shredded monterey jack cheese
Instructions
Step 1
1 | Add chicken breasts to bottom of slow cooker, top with salt, pepper, cumin, oregano, chili powder, and cayenne pepper. (I just eyeballed these amounts)
Step 2
3 | Cover and cook on high for about 4 hours. ( I did about 4.5 hours)
Step 3
4 | At about 4.5 hours remove chicken to large mixing bowl, shred, then return to slow cooker. Add the cream cheese, half and half, stir and cook additional 20 minutes.
Step 4
6 | Stir well and serve with desired toppings. We did sour cream, shredded cheese, tortilla strips and green onions.
