Herby Fish with Wilted Greens & Mushrooms

Ingredients

3 tablespoonsolive oil
divided
0.5sweet onion
large, sliced
3 cupscremini mushrooms
sliced
2cloves garlic
sliced
4 cupskale
chopped
1tomato
medium, diced
2 teaspoonsMediterranean Herb Mix
divided
1 tablespoonlemon juice
½ teaspoonsalt
divided
½ teaspoonground pepper
divided
4 x 4 ouncecod fillets
sole, or tilapia
fresh parsley
chopped, for garnish
Instructions
Step 1
Heat oil in a large saucepan over medium heat.
Step 2
Add onion; cook, stirring occasionally, until translucent, 3 to 4 minutes.
Step 3
Add mushrooms and garlic; cook, stirring occasionally, until the mushrooms release their liquid and begin to brown, 4 to 6 minutes.
Step 4
Add kale, tomato, and 1 teaspoon herb mix.
Step 5
Cook, stirring occasionally, until the kale is wilted and the mushrooms are tender, 5 to 7 minutes.
Step 6
Stir in lemon juice and salt and pepper. Remove from heat, cover, and keep warm.
Step 7
Sprinkle fish with the remaining herb mix and salt and pepper. Heat oil in a large nonstick skillet over medium-high heat.
Step 8
Add the fish and cook until the flesh is opaque, 2 to 4 minutes per side, depending on thickness.
Step 9
Transfer the fish to a serving platter.
Step 10
Top and surround the fish with the vegetables; sprinkle with parsley, if desired.
