Instructions

Salad

Step 1
Cook barley according to instructions on pack and allow to cool
Step 2
Toast cashews and sunflower seeds on a dry frypan over low heat until lightly toasted and allow to cool
Step 3
Finely dice capsicum
Step 4
Finely chop spring onions and parsley
Step 5
Add salad dressing into a bowl and whisk, or to a jar, add the lid and shake
Step 6
Combine cooled barley, nuts and chopped and diced vegetables into a bowl.
Step 7
Pour salad dressing over the salad and mix together
Step 8
Cover and put salad in the fridge and enjoy. Salad is even better the next day.
Step 9
The original recipe calls for just 6 Tbsp of dressing- start with this and then add the rest (only about a tablespoon leftover) if you want more flavour.

I usually prep all the ingredients well in advance so the barley and nuts/seeds can cool then give the dressing a quick whisk before tossing everything together just before serving.
