Instructions
Cool the quinoa
Step 1
Rinse 100 g of quinoa under cold water.
Step 2
In a saucepan, combine quinoa with 200 ml of water. Bring to a boil.

Reduce heat, cover, and simmer for about 15 minutes or until water is absorbed.
Step 4
Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and allow to cool.
Prepare the vegetables and mango
Step 5
Peel and dice the mango. Julienne or grate the carrot. Thinly slice the red bell pepper. Dice the cucumber.
Toast the almonds

In a dry skillet over medium heat, toast the chopped almonds until lightly golden and fragrant. Set aside to cool.
Make the dressing

In a bowl, whisk together olive oil, lime juice, maple syrup, Dijon mustard, salt, and pepper until well combined.
Assemble the salad

In a large mixing bowl, combine the cooled quinoa, prepared mango, vegetables, toasted almonds, and chopped fresh coriander. Drizzle the dressing over the salad and toss gently to combine.
