Instructions
Step 1
Heat oil in pot over medium. Add in onion and garlic. Cook until becomes aromatic. Rinse and dry beans.
Step 2
Add in vegetable broth, scraping own brown bits in bottom of pot.
Step 3
Add in beans, diced tomatoes, tomato paste, farro, mixed vegetables, salt, pepper and herbs. Reduce to medium-heat and cooked covered until beans and farro are soft, about 10-15 minutes, while stirring every few minutes
Step 4
Serve soup with option topping of additional parsley and Parmesan cheese.
