Instructions

Curry

Step 1
Cook the rice according package instructions.
Step 2
Slice the zucchini.
Step 3
Heat 1 tbsp sesame oil in a pan. Leave the heat on medium high and add the zucchini. Fry for about 2min until slightly golden.
Step 4
Add the chickpeas and fry for another 2min.
Step 5
Remove the vegetables from the pan.
Step 6
Heat the sesame oil in the same pan. Leave the heat on medium high and add the curry paste. Fry for 1min.
Step 7
Add the coconut milk and stir well.
Step 8
Now add the vegetables. Reduce the heat to medium and let simmer for about 5min.

Burrito

Step 9
Top the front center of the wrap with half the basmati rice.
Step 10
Pure over some of the curry.
Step 11
Fold the sides of the wrap inward first. Then place the front part of the wrap over the filling and roll up under tension exercise.
Step 12
Repeat with the other tortilla wrap.
Step 13
Roast the wraps on all sides. Enjoy!
