Step 1
Heat oil over medium-high heat and add the mustard seeds. When they begin to pop, add the lentils. Toast the lentils in the oil until they begin to turn light brown, about 30 seconds, then add ginger and curry leaves. Continue frying for another 30 seconds or until browned. Stir in sliced onion and fry for about 5 minutes, until translucent.
Step 2
Now add the turmeric and carrot, followed by the coconut and give it a all a good stir. To finish, add the cabbage and fry until cooked through - about 5 minutes. Season with salt and pepper.
