Instructions

Step 1
In a 3 qt saucepan over medium heat, bring the stock, potatoes, onion, sausage, oregano, black pepper & red pepper to a boil. Cook for 10 minutes, or until the potatoes are softened.
Step 2
Remove the sausage from the pan. Cut into thin slices & set aside.
Step 3
Transfer the rest of the mixture to a blender & process for about 10 seconds, or until coarsely pureed. Return the mixture to the saucepan. Stir in the milk & sausage.
Step 4
While the mixture is cooking, place the kale in a 2 qt casserole. Cover with vented plastic wrap & microwave on high for 4 minutes, or until well wilted. Stir into pureed mixture.
