Instructions

Step 1
Preheat oven to 375 degrees. Clean mushrooms and remove stems. Set aside for later. Finely chop stems. Mince garlic.

Step 2
Fry and brown breakfast sausage (uncased) on stove, adding a small amount of salt and pepper.. Add the minced garlic and continue to cook. Add in the italian seasoning and chicken broth. Add a small amount of finely chopped mushroom stems and let simmer until all of the liquid has been absorbed and mushroom stems are softened.

In a mixing bowl, combine mushrooms. 2 tsp olive oil, 1/4 tsp salt, a pinch of pepper, and a pinch of umami seasoning.

Step 4
Combine blue cheese, butter, cooked sausage mix and half the panko in another mixing bowl. Mash until combined. Add black pepper as needed.

Step 5
Heap mix into open mushroom caps and press down gently to form mounds. Top with remaining panko.

Bake for 20 minutes an serve.
