Sweet, spicy, and wholesome one pot chili for those cold nights where the motivation to cook dinner is slim at best. Perfectly paired with fresh corn bread topped with honey and salted butter on the side.
Makes excellent leftovers!
Easily substitute with alternative ground meat 1:1, like ground beef, venison and/or bison. To turn up the heat, substitute the green bell pepper for a poblano.

2 tablespoonsolive oil

1 lbground turkey

1red onion
medium, chopped

3garlic cloves
minced

1green pepper
diced

30 ozcanned diced fire roasted tomatoes

15 ozcanned red kidney beans
drained & rinsed

15 ozcanned pinto beans
drained & rinsed

5 teaspoonschili powder

2 teaspoonssmoked paprika

2bay leaves

1 ½ teaspoonsdried parsley

1 tablespoonground cumin

2 teaspoonsdried oregano

1 teaspoongarlic powder

2 tablespoonsdark brown sugar

cayenne pepper

salt
to taste

Instructions
Step 1
Wash and prep fresh ingredients. Set aside.













Step 2
Open cans. Drain and rinse the beans. Set aside.




Step 3
Heat large stockpot over stove on medium-high heat. Add olive oil, diced onion, and bell peppers. Sauté for 2 minutes. Add in minced garlic and sauté for an additional minute.







Step 4
Added in ground meat and sauté for approximately 4-6 minutes or until the meat is faintly pink. The meat will continue cooking while other ingredients are incorporated.



Step 5
Stir in the cans and seasonings to taste. Bring to boil, cover, and reduce to a simmer for 10 minutes.


















Step 6
Turn off the heat, garnish & serve. Enjoy!
