Instructions
Step 1
Pat duck breast dry and score skim in a cross hatch pattern, being careful not to cut into the meat.
Step 2
Season generously with salt and pepper.
Step 3
Place breast's skin side down in a cold skillet, then turn heat to medium.
Step 4
Slowly render the fat for 6-8 minutes until skin is crisp and golden.
Step 5
Flip and cook the meat side for 3-5 minutes until done to your liking, then remove from the pan and let rest.
Step 6
Pour off excess fat, leaving about 1 oz in the skillet, and stir in the heavy cream.
Step 7
Simmer over medium heat for 2-3 minutes until slightly thickened, seasoning to taste.
Step 8
Slice and serve with sauce.
