Instructions
Step 1
1. Cook duck according to recipe for roast duck.
Step 2
2. Cut duck into 4 joints and keep hot.
Step 3
3. Pour off all but 15ml (1 tbsp) fat from roasting tin.
Step 4
4. Stir in flour and cook for 2 mins on hob.
Step 5
5. Add rind, juice, wine, jelly and sherry.
Step 6
6. Cook gently, stirring, until jelly dissolves and sauce comes to the boil and thickens.
Step 7
7. Pour a little sauce over duck. Garnish with orange and watercress.
Step 8
8. Serve with remaining sauce separately.
