In separate pots boil potatoes and beetroots with peel (just don’t overcook, so that the vegetables wouldn’t be too soft). Let vegetables to cool down completely and then peel them.
Step 3
Peel the onion and dice it. Preheat a couple of tablespoons of oil in a frying pan over medium heat, add onion and fry until it softens. Add extra oil if you need. Leave onion to cool down as well.
Step 4
Dice potatoes, beetroots and pickles. Put into one bowl.
Step 5
Pour off the liquid from the beans. Put in the same bowl with vegetables.
Step 6
Add onions (with oil) to the salad. Season with parsley, salt, pepper, mix and enjoy!

>> You can use leek instead of the onion, but don’t fry it.

>> If you want to prepare salad the day before, add pickles just before serving, otherwise the salad will go bad faster.
