Instructions

Step 1
Place eggs into a small pot and cover with cold water by 1 to 2 inches.
Step 2
Bring to a boil, then cover the pot and turn off the heat.
Step 3
Let the eggs rest in hot water, covered for 10 to 12 minutes, depending on how you like your eggs.
Step 4
Transfer eggs into an ice water bath to chill for 12 to 15 minutes. This stops the cooking process and makes it easier to peel off.
Step 5
Peel off eggshells to place eggs in a serving bowl. Mash the eggs into chunky bits. Add in salt, black pepper, mayonnaise, dijon mustard, chili oil, parmesan, your choice of herb seasoning, and truffle oil based on your personal preference. Mix everything together and serve it on a crispy toasted croissant.
