British Scotch Eggs

A delicious British delicacy, these are soft boiled eggs encased in quality sausage meat and breadcrumbs and fried for 5 minutes.

Instructions

Step 1
Bring a pan of water to the boil. Once boiled, slightly lower the heat and carefully place your eggs in the water (I use a slotted spoon for this). Boil for 4 and a half minutes and then immediately remove and place in an bowl filled with water and ice. After 5 minutes, carefully peel the eggs and set aside.
Step 2
Toast your crusty bread slices. Once browned, blitz the bread with the salt, pepper, and Italian herb mix. Then, set this breadcrumb mix aside.
Step 3
Heat the vegetable oil in a deep pan to 150 degrees celsius. While heating, split your sausage meat into four equal parts. With wet hands, very carefully roll one egg up in one part of the sausage meat. The sausage meat may split but try to keep an even amount of sausage meat around the egg.
Step 4
With dry hands now, empty your breadcrumb mix into a bowl and roll your meat encased egg around the bowl, trying to get as much breadcrumb on your egg as possible.
Step 5
Now, using a slotted spoon, carefully drop your egg into the hot oil and time for 5 minutes . It should be sizzling but not vigorously spitting oil. After 2 and a half minutes, turn the egg over.
Step 6
Finally, remove your eggs from the oil and place on kitchen roll. Leave to cool for around half an hour before enjoying your soft boiled scotch eggs! A truly British treat!
