Feta Stuffed Salmon

Instructions

Step 1
Preheat the oven to 205°c
Step 2
Heat a small pan over medium heat with a little olive oil and saute the kale for about 5 minutes until soft.
Step 3
Transfer the kale to a bowl and combine with the feta cheese, lemon zest, dill, garlic powder, and a pinch of salt & pepper. Mix well to form a creamy filling using a fork to break up the feta clumps
Step 4
Using a sharp knife, slice an opening into one side of your salmon fillets, making sure not to slice through the other side.
Step 5
Spoon some of the feta mix into each opening to fill the salmon fillets, then place the salmon fillets skin-side down onto a parchment lined tray
Step 6
Brush the tops of the fish with a thin layer of dijon mustard.
Step 7
Combine the bread crumbs with a drizzle of olive oil, paprika, garlic powder, parsley and pinch of salt & pepper. Coat the top of the salmon with the crumb mix.
Step 8
Bake the salmon 10-12 minutes. Once ready, top with fresh squeezed lemon
