1shallot

6garlic cloves

2 inginger

3 tblsgaram masala

2 tsptumeric

2 tspkosher salt

1 tspred pepper flakes

1zest of lemon
Chicken

2 lbboneless skinless chicken breast
cubed

0.5 CGreek yogurt

1can unsweetened coconut milk

1can tomato paste

¼ ccilantro
chopped

Instructions
Curry Paste
Step 1
In a blender combine all curry paste ingredients until a smooth paste forms
Make the Chicken
Step 2
Combine 2 tablespoons of curry paste, the chicken and the yogurt in a gallon size bag. Seal the bag and massage the mixture into the chicken. Marinate for 30 minutes to overnight
Step 3
Heat a large, high sided skillet over medium heat. Add 1/4 cup of curry paste and cook until gragrant. Stir in the marinated chicken, coconut milk and tomato paste. Cover and cook until the chicken is cooked through. Remove the lid and simmer until teh sauce thickens slightly.
Step 4
Stir in the cilantro and serve the chicken over rice.
