Chicken Parmesan

To butterfly chicken breasts: lay the chicken breast flat on a cutting board. Usually, there is a piece of meat (the tender) that sticks out from the rest, connected by bits of tissue. Cut away tender and store it for another recipe. Working parallel to the cutting board, slice chicken breast almost all the way through lengthwise, and open up the chicken breast so it looks a bit like a butterfly. Place into a gallon-sized plastic bag and seal tightly. Using a meat tenderizer or a rolling pin, gently pound the chicken until it's roughly the same thickness throughout.

Instructions

Step 1
1. Preheat oven to 400 degrees. Set up an assembly line of bowls: flour, egg, and panko crumbs.

2. Season chicken on both sides with salt and pepper.

Dredge each breast in flour, then dip in egg, and then dredge on both sides in the bread crumbs.

3. Heat oil in a large skillet until almost smoking.

Cook chicken until golden brown on each side, about 2 minutes per side.

4. Transfer chicken to a baking dish or sheet. Top each with tomato sauce and cheeses. Bake until chicken is cooked through and cheese has melted, about 5-7 min-utes. Remove and serve with additional sauce.
