Smoked Tofu Panini

This panini sandwich is easy to prepare, made with just a few ingredients, and is absolutely delicious thanks to the smoked tofu and green pesto. You can prepare it in a panini press, or just as we did - in a pan.
The result is a delicious, crispy panini ready to grab-n-go!

Step 1
Add the oil to a small pan on medium heat. When hot add the tofu and sprinkle over half of the spices. Cook until the bottom is golden, about 3 minutes.
Step 2
Flip the tofu and add the rest of the spices. Cook for another 3 minutes, until golden. Set aside.
Step 3
Spread the hummus and pesto on both slices of bread. Top with the vegetables and tofu.
Step 4
4 Close the sandwich and brush the outside with some butter. Cook on the grill pan on medium hea until golden on both sides. Enjoy!
