Ingredients
4 servings
200gvermicelli noodles
¼ cuppeanut oil
500gchicken stir fry strips
1red capsicum
seeded, sliced
1red onion
thinly sliced
1 bunchbroccolini
4spring onion
sliced
2red chilies
sliced
½ cupsalted cashew nuts
Lime Chilli Sauce
Instructions
Step 1
Cook noodles to packet directions. Drain. Keep warm
Step 2
In a wok or large frying pan, heat half the oil on high. Stir-fry chicken in three batches, 2-3 minutes each, until golden. Set aside
Step 3
In same wok, heat remaining oil on high. Stir-fry capsicum, red onion, broccolini, spring onion and chilli 1-2 minutes until tender
Lime Chilli Sauce
Step 4
In a jug whisk sauce ingredients together
Step 5
Toss chicken, cashews, sauce and vegetables. Stir fry 1-2 mins until hot. Spoon on top of noodles. Serve with basil and coriander
