Step 1
1. Cut the sweet potato in small cubes. Bake at 190° for 20 minutes or until soft.

2. Cook the cup of quinoa according to package directions.

3. Cut and sauté the red onion until soft

4. Cut the bell peppers and cilantro
Step 5
5. Strain the black beans and corn
Step 6
6. Once all the ingredients above have cooled, mix the together in a large bowl.
Step 7
7. Add the olive oil, lime juice, salt, pepper, chili powder, cumin and cayenne to the bowl. Mix well and add more spices to taste.
Step 8
8. Optional: you can also add avocado or feta cheese to make the flavor stronger.
