Step 1
In a large pan on medium, add the chicken, bacon, smoked paprika, garlic powder, and basil. Cook until starting to brown. Add the onions into the pan and cook until soft. Add the garlic and cook until aromatic. Add in the tomato purée and pesto, mix well, then add the rice and mix. Pour in the stock and cook on low covered for 20-25 minutes, or until rice is cooked through, adding more stock if necessary.

Step 2
Heat broiler. Once cooked, sprinkle cheese over the top and heat under the broiler until bubbling and golden, no more than 5 minutes.
