The 1/4 Pound Cake

Traditional pound cake gets its name because it contains a pound each of eggs, sugar, butter, and flour. So naturally, I made a healthy one. A quarter pound of each ingredient. Because apparently that's how math works.

Instructions

Preheat your oven to 350F, and line a small glass meal prep container (mine are 6.2" x 4.5") with parchment paper. Lightly spray the paper with oil.

Beat your egg in a large bowl. Whisk with the granulated monk fruit. Whisk in the cottage cheese. Mix in the whole wheat flour with a silicone spatula until just fully combined.

Transfer your batter to your prepared pan, and smooth out the top.

Bake at 350F oven for about 45 minutes (uncovered), or until the top is fully set and golden brown, a toothpick to the center comes out almost clean, and the internal temperature is at least 205F.
