Step 1
In a pot, add the peanut butter, chilli oil, soy sauce, miso, and rice vinegar. Turn on the heat and add the chicken stock and coconut milk. Bring to a boil, then simmer.
Step 2
While the broth is simmering, add the pork mince to a pan with some vegetable oil, oyster sauce, rice wine vinegar, and chilli bean paste.
Step 3
Stir until browned (4-5 minutes), then leave on high heat without stirring until the liquid has evaporated and the meat is browned at the bottom (5-10 minutes).
Step 4
Cook the noodles according to package directions. Rinse them under cold water, then add them to a bowl. Top with the broth, pork, and any optional toppings.
